Something's Burning.....Meat Loaf
I think I'm going to call all of my recipe posts "Something's Burning" -- Cooking has never been my forte but I'm actually starting to enjoy it more now that we own a stove with more than two working burners and there isn't need to flip the breaker switch when we use the oven!!
I'm not a huge fan of meatloaf (in fact if I cook it, I don't normally eat it) but Chad loves him some meatloaf, which was on his list of requests for dinner this week. I found this recipe on the Food Network a few months ago and I've made it a few times since and the hubby has given it two thumbs up and a belly rub. Enjoy!
Notice the amount of mashed potatoes? He loves some homemade mashed potoates!
Old Fashioned Meat Loaf - A.K.A. "Basic" Meat Loaf

(anything with Basic in the title---I'm all about it!!)
Ingredients
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Directions:
Preheat oven to 375 Degrees F.
Mix all meatloaf ingredients well and place in a baking dish.
Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Aspen
Chad did a lot of skiing, I did a lot of resting.....we flew out on Thursday to visit our friends Gus and Antonella who live in Snowmass.
We ate at a great restaurant, got to go to the X Games, and went to a Ghostland Observatory concert which was an outdoor concert but was well worth it to brave the cold to see the laser light show in the midst of the mountains. It was a great long weekend getaway for us before tax season starts and I'm up to my ears with work for the next couple of months!
Even though we had the most horrendous travel experience on the flight to Aspen, it was well worth it to getaway and relax!
